Chicken Casserole
Easy, Healthy Chicken Casserole for all the family
Ingredients
Eight chicken pieces
Two onions, peeled and chopped roughly
Four carrots, washed and sliced
500 ml. chicken stock (chicken oxo)
Oil for frying
Salt and pepper to season
Heat the oil in a large pan and brown the chicken. Add the onions. Remove the after five minutes and place in a large casserole dish.
Add carrots and chicken stock to the pan and simmer for ten minutes. Place the mixture into the casserole dish and add the seasoning.
Cover and place in the preheated oven and cook for at least three hours, the longer you leave it in the oven... The better it tastes!
Serve with rice, pasta, dumplings or potatoes
